Method
- Cook the potatoes in the microwave or oven. While they cook, brown the ground beef. Season with taco seasoning or chili powder, cumin, paprika, salt and pepper. Stir in the black beans.
- When the potatoes are done, slit them open and mash the insides just a little to create a pocket. Scoop some of the ground beef and bean mixture into each potato. Top with shredded cheese, and if desired, pop under the broiler to get cheese melty. Top with whatever you like- salsa, guac, sour cream, jalapenos, cilantro- and serve with a salad or chips and salsa!
Baking the potatoes gives a crisper skin but can take a long time, especially with sweet potatoes, so if I need dinner quickly, I use the microwave method. I also do a mix of Russet and sweet potatoes, depending on what each family member prefers.
