- Cook the potatoes in the microwave. While they cook, brown the ground beef. Season with taco seasoning or chili powder, cumin, paprika, salt and pepper. Stir in the black beans.
- When the potatoes are done, slit them open and mash the insides just a little to create a pocket. Scoop some of the ground beef and bean mixture into each potato. Top with shredded cheese, and if desired, pop under the broiler to get cheese melty. Top with whatever you like- salsa, guac, sour cream, jalapenos, cilantro- and serve with a salad or chips and salsa!
You can bake the potatoes in the oven, but this takes about 45 min to an hour, so for this method, we'll microwave them. But if you have time or can do it ahead, baking them in the oven is a great option!
