Taco Stuffed Potatoes

This Taco Stuffed Potatoes recipe makes a fantastic weeknight dinner because they’re hearty, customizable, and come together quickly thanks to microwave‑baked potatoes and a simple stovetop filling. You can use russet or sweet potatoes and whatever toppings you love!

Ingredients
  

  • 1 lb ground beef Or sub in 2-3 cups pulled rotisserie chicken
  • 1 packet taco seasoning, or 2 tsp chili powder, 1 tsp cumin, 2 tsp paprika
  • salt and pepper to taste
  • 15 oz can black beans, drained
  • 6 potatoes, russet or sweet
  • Toppings of choice: shredded cheese, salsa, guacamole, sour cream, jalapenos, pickled onions, cilantro
  • Sides: salad with Chipotle ranch, chips & salsa

Method
 

  1. Cook the potatoes in the microwave. While they cook, brown the ground beef. Season with taco seasoning or chili powder, cumin, paprika, salt and pepper. Stir in the black beans.
  2. You can bake the potatoes in the oven, but this takes about 45 min to an hour, so for this method, we'll microwave them. But if you have time or can do it ahead, baking them in the oven is a great option!
  3. When the potatoes are done, slit them open and mash the insides just a little to create a pocket. Scoop some of the ground beef and bean mixture into each potato. Top with shredded cheese, and if desired, pop under the broiler to get cheese melty.
    Top with whatever you like- salsa, guac, sour cream, jalapenos, cilantro- and serve with a salad or chips and salsa!
