Ingredients
Method
- Cook the potatoes via your preferred method, oven or microwave. While they cook, warm the pizza sauce on the stovetop in a small sauce pan.
- Once the potatoes are fork tender, split them and squeeze open. I like to mash them up just a bit with a fork to make a sort of boat for the ingredients. Spoon in pizza sauce, pepperonis, and whatever other toppings you like. Top this with a healthy handful of cheese, sprinkle on some dried oregano, and place under broiler until the cheese melts. Serve with a salad.
Baking gives a crisper skin but can take a long time, especially with sweet potatoes, so if I need dinner quickly, I use the microwave method. I also do a mix of Russet and sweet potatoes, depending on what each family member prefers.
