- Place the potatoes on a parchment lined sheet pan, and spray or coat with olive oil, salt and pepper to taste. Roast in a 400 degree oven for about 25 minutes, or until fork tender.
- While the potatoes cook, in a skillet over medium heat, brown and break apart the ground beef. Drain fat and season with taco seasoning, or mix of cumin, chili powder, and paprika.
- Once the potatoes and beef are done, assemble the bowls. Potatoes on bottom, a scoop of taco beef, about ½ cup cottage cheese, topped with avocado and drizzled with hot honey.
You can use regular honey if you don’t like spice.
