Beef and Potatoes Bowl

Ingredients
  

  • 2 lbs ground beef
  • 1 packet taco seasoning or 2 tsp cumin, 2 tsp chili powder, 2 tsp paprika
  • 3-4 sweet potatoes, peeled and cubed *can sub in Russet potatoes or a mix of both*
  • 2 avocados, scored and scooped out of skin
  • 3 cups cottage cheese
  • Hot honey for drizzling
  • salt and pepper to taste

Method
 

  1. Place the potatoes on a parchment lined sheet pan, and spray or coat with olive oil, salt and pepper to taste. Roast in a 400 degree oven for about 25 minutes, or until fork tender.
  2. While the potatoes cook, in a skillet over medium heat, brown and break apart the ground beef. Drain fat and season with taco seasoning, or mix of cumin, chili powder, and paprika.
  3. Once the potatoes and beef are done, assemble the bowls.
    Potatoes on bottom, a scoop of taco beef, about ½ cup cottage cheese, topped with avocado and drizzled with hot honey.
  4. You can use regular honey if you don’t like spice.
