Ingredients
  

  • 1 2.5-3 lb pork picnic roast
  • 1.5 lb baby potatoes halved, or yukon golds quartered
  • 1 head red cabbage, sliced or cut into bit size chunks
  • salt and pepper to taste, plus seasoning blend of choice
  • 1/2 cup yellow or spicy brown mustard
  • 1/2 cup honey

  • 1 Instant Pot or Slow Cooker

Method
 

  1. Season the pork with salt, pepper, and whatever seasoning blend you like (steak seasoning, everything bagel, lemon pepper, ect). Cook the pork in an instant pot (with 1/2 cup water in bottom) or slow cooker until tender enough to shred. I use the instant pot set on pressure cook for about 3 hours, or slow cooker for 6 hours.
  2. About 30 minutes before you're ready to eat, toss the potatoes and cabbage in a drizzle of olive oil, with salt and pepper to taste. Spread them out on a parchment lined sheet pan. Roast in the oven at 400 degrees for about 20 minutes, until potatoes are tender and cabbage is soft.
  3. While this cooks, remove the pork from instant pot or slow cooker and break into chunks. Place on a baking sheet and put under broiler for about 5 minutes, just until the edges crisp up.
  4. If the pork looks dry, just pour a couple spoonfuls of the cooking liquid from slow cooking over the top before placing it under the broiler.
  5. While this is happening, whisk together the mustard and honey to combine.
    Plate the pork, potatoes, and cabbage and drizzle the honey mustard over the top of everything. Optional side dish- salad.
    If you don't like cabbage, feel free to substitute a different vegetable.
  6. I usually cook double the amount of pork I need, and freeze half. That saves me so much time on another meal like this!
