- Begin by cooking the potatoes, either in the microwave or the oven.
- While the potatoes cook, chop rotisserie chicken and warm it in a pan, seasoning with chili powder, cumin, paprika, salt & pepper.
- To assemble: split the tender potato and mash a little with a fork, then fill it with chicken and cheese, top with BBQ sauce and toppings of choice. Serve with salad, baked beans, or mac & cheese.
Baking gives a crisper skin but can take a long time, especially with sweet potatoes, so if I need dinner quickly, I use the microwave method. I also do a mix of Russet and sweet potatoes, depending on what each family member prefers.
This is also good with pulled pork, which is super easy to make in an instant pot. Just put a 2-3 lb pork picnic roast (boneless) into an instant pot with about 1/4-1/2 cup of water or broth in the bottom, season, and pressure cook for about 3 hours. Shred it, and then you can divide it up and freeze for easy meals like this later!
