BBQ Stuffed Potatoes

These BBQ Stuffed Potatoes are a weeknight gift because they turn simple ingredients into a hearty, comforting meal with almost no effort.

Ingredients
  

  • 6 potatoes, Russet or sweet
  • 3 cups pulled rotisserie chicken, or pulled pork
  • salt and pepper to taste
  • 2 tsp chili powder
  • 1 tsp cumin
  • 2 tsp paprika
  • BBQ sauce of choice
  • 8 oz shredded smoked cheese, like gouda or cheddar
  • Toppings of choice- picked onions, pickles, jalapenos, or diced red onion

Method
 

  1. Begin with the potatoes: Pierce the potatoes with a fork and microwave until tender.
  2. A slightly better but slower option is to bake in oven until fork tender.
  3. While the potatoes cook, chop rotisserie chicken and warm it in a pan, seasoning with chili powder, cumin, paprika, salt & pepper.
  4. This is also good with pulled pork, which is super easy to make in an instant pot. Just put a 2-3 lb pork picnic roast (boneless) into an instant pot with about 1/4-1/2 cup of water or broth in the bottom, season, and pressure cook for about 3 hours. Shred it, and then you can divide it up and freeze for easy meals like this later!
  5. To assemble: split the tender potato and mash a little with a fork, then fill it with chicken and cheese, top with BBQ sauce and toppings of choice. Serve with salad, baked beans, or mac & cheese.
