Total Time 20 minutes
Servings: 4 -6
Course: Main Course
Cuisine: American

Ingredients

  • 4-6 Russet potatoes
  • 14 oz jar pizza sauce
  • 2-3 cups shredded Mozzarella or mix of Italian cheeses
  • 6 oz pepperonis chopped
  • Dried oregano for sprinkling
  • Optional: lb Italian sausage (cooked), sliced black olives, sliced mushrooms, crumbled bacon, or any other pizza toppings you like
  • Salad for serving

Method

  1. Cook the potatoes via your preferred method, oven or microwave.
While they cook, warm the pizza sauce on the stovetop in a small sauce pan.
  2. Baking gives a crisper skin but can take a long time, especially with sweet potatoes, so if I need dinner quickly, I use the microwave method. I also do a mix of Russet and sweet potatoes, depending on what each family member prefers.
  3. Once the potatoes are fork tender, split them and squeeze open. I like to mash them up just a bit with a fork to make a sort of boat for the ingredients.
Spoon in pizza sauce, pepperonis, and whatever other toppings you like. Top this with a healthy handful of cheese, sprinkle on some dried oregano, and place under broiler until the cheese melts. Serve with a salad.
