- In a bowl, coat the chicken thighs with the oil, lime juice, and seasonings- garlic, chili powder, cumin, paprika, oregano, salt, and pepper. Grill over medium high heat for 8 minutes per side, or until cooked through.
- Once chicken is done, chop it up into bite size or slightly smaller pieces.
- Assemble tacos- chicken, cheese, slaw, crema, salsa, and a squeeze of lime juice- and serve! For sides, try rice & beans, chips & guac, or chips & salsa.
If you have time or can plan ahead, marinate the chicken for 30 min (or up to 24 hours) in the fridge before grilling!
