Ingredients
  

  • 2 lbs chicken thighs
  • 2 cloves grated garlic, or 2 tsp garlic powder
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tbsp chili powder
  • 2 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • salt and pepper to taste
  • street taco size tortillas
  • 16 oz bag fresh coleslaw
  • Toppings: grated cheese, salsa, lime crema or sour cream, limes, sliced avocado, jalapenos

Method
 

  1. In a bowl, coat the chicken thighs with the oil, lime juice, and seasonings- garlic, chili powder, cumin, paprika, oregano, salt, and pepper. Grill over medium high heat for 8 minutes per side, or until cooked through.
  2. If you have time or can plan ahead, marinate the chicken for 30 min (or up to 24 hours) in the fridge before grilling!
  3. Once chicken is done, chop it up into bite size or slightly smaller pieces.
  4. Assemble tacos- chicken, cheese, slaw, crema, salsa, and a squeeze of lime juice- and serve! For sides, try rice & beans, chips & guac, or chips & salsa.
