Method
- In a wok or large skillet, drizzle olive oil. If using a protein other than rotisserie chicken, add to pan and cook through. Add in zucchini, broccoli, mushrooms, bell pepper, and onion. Simmer until vegetables are soft.
- While this is cooking, in a 2 cup measuring cup, combine soy sauce, broth, cornstarch, garlic, ginger, honey, rice vinegar, sesame oil, and if using, red pepper flakes. Whisk until well combined.
- If using rotisserie chicken, add it in now. Pour the sauce mixture over vegetable and meat skillet, and simmer for 3-5 minutes to allow sauce to thicken slightly. Serve over the cooked rice, and top with toppings of your choice.
