Ingredients
  

  • Ingredients:
  • 3-4 cups shredded rotisserie chicken, or one other protein option: 2 lbs ground chicken, 2 lbs ground beef, 2 lbs peeled shrimp, or 2 lbs sliced pork
  • 2 zucchini, sliced into medallions
  • 12 oz bag frozen broccoli florets
  • 8 oz sliced mushrooms
  • 1-2 red bell pepper sliced
  • 1 onion sliced
  • ½ cup soy sauce
  • ½ cup broth chicken or beef
  • 1-2 tbsp cornstarch
  • 2 cloves garlic grated or 1 tsp garlic powder
  • 1 inch fresh ginger, grated or 1 tsp ground ginger
  • 1 tsp honey
  • 2-3 Tbsp rice vinegar
  • 1 Tbsp sesame oil
  • Pinch of red pepper flakes optional
  • 3 cups rice, cooked to package instructions
  • Optional toppings: sriracha, sesame seeds, sliced radishes, sliced green onions

Method
 

  1. In a wok or large skillet, drizzle olive oil. If using a protein other than rotisserie chicken, add to pan and cook through. Add in zucchini, broccoli, mushrooms, bell pepper, and onion. Simmer until vegetables are soft.
  2. While this is cooking, in a 2 cup measuring cup, combine soy sauce, broth, cornstarch, garlic, ginger, honey, rice vinegar, sesame oil, and if using, red pepper flakes. Whisk until well combined.
  3. If using rotisserie chicken, add it in now. Pour the sauce mixture over vegetable and meat skillet, and simmer for 3-5 minutes to allow sauce to thicken slightly.
    Serve over the cooked rice, and top with toppings of your choice.
