Shrimp Scampi Linguini

Ingredients
  

  • 2 lbs shrimp peeled and deveined
  • 1 lb linguini
  • 4 tbsp butter
  • 2 tbsp olive oil
  • 3-4 cloves garlic grated
  • 2 lemons zested and juiced
  • ½ cup parsley chopped
  • salt and pepper to taste
  • red pepper flakes to taste, optional
  • for topping: grated Parmesan cheese
  • sides: large salad, garlic bread

Method
 

  1. Bring a large pot of water to a boil, salt generously, and cook pasta according to package directions. When tender or cooked to desired doneness, drain and return to pot.
  2. While the pasta is boiling, begin on the shrimp and sauce. In a skillet over medium heat, melt the butter and olive oil together. Add in the grated garlic and stir around skillet for about a minute, careful not to burn it. Add in the shrimp, and season with salt and pepper to taste. Cook the shrimp for about 5 minutes, stirring and until just pink. Do not overcook the shrimp. Once pink, remove skillet from the heat and stir in lemon zest, juice, parsley, and if using, red pepper flakes.
  3. Pour this entire shrimp and sauce mixture over the drained pasta and toss well to combine and coat the pasta. Optional- top with Parmesan cheese. Serve with salad and garlic bread.
