Method
- Brown your sausage or chicken.
- Add in prepped vegetables and sauté until they begin to soften.
- Season with salt and pepper.
- Add tomatoes, drained beans, and seasoning.
- Add broth and bring to a simmer.
- Add pasta and simmer until pasta is done and vegetables are tender.
If using chicken, add a tbsp of olive oil when adding the vegetables.
Notes
Serve with salad of choice - Caesar works great with this, or a chopped salad of lettuce, black olives, Roma tomato slices, croutons, and a vinaigrette - and if desired, breadsticks or French bread.
