Sometimes you want a dinner that comes together fast but delivers big comfort, so that you can unwind and relax. And one pot means less clean up.

Ingredients
  

  • 1 lb ground Italian sausage or ground chicken your choice
  • 1 onion diced
  • 2-3 carrots sliced
  • 2-3 celery stalks chopped
  • 2-3 cloves garlic grated, or 1 ½ tsp garlic powder
  • 28 oz can diced tomatoes
  • 15 oz can red kidney beans drained
  • 15 oz can white beans drained
  • salt and pepper to taste
  • 1 tbsp dried Italian seasoning
  • ½ lb elbow pasta
  • 4 cups chicken broth

Method
 

  1. Brown your sausage or chicken.
  2. Add in prepped vegetables and sauté until they begin to soften.  
  3. If using chicken, add a tbsp of olive oil when adding the vegetables. 
  4. Season with salt and pepper.  
  5. Add tomatoes, drained beans, and seasoning.  
  6. Add broth and bring to a simmer. 
  7. Add pasta and simmer until pasta is done and vegetables are tender.  

Notes

Serve with salad of choice – Caesar works great with this, or a chopped salad of lettuce, black olives, Roma tomato slices, croutons, and a vinaigrette – and if desired, breadsticks or French bread.
