Method
- Brown the ground chicken/beef in a large skillet.
- Add in the zucchini, red bell pepper, onion and garlic.
- Season with balsamic, salt and pepper, oregano, and red pepper flakes.
- Cook over medium low heat until veggies begin to soften.
- While this simmers, cook rice to package instructions. (Recommended method: bring 3 cups water to boil, stir in 3 cups of instant rice, cover with lid, turn off heat and let sit for 10-12 minutes until all liquid is absorbed.)
- When zucchini, bell pepper, and onions are almost done, add cherry tomatoes.
- Cook until all vegetables are soft.
Notes
Spoon the meat and vegetable mixture over a bed of rice, top with feta and olives and serve. Pairs well with warm naan bread and hummus.
