Ingredients
  

  • 2 lbs ground chicken or beef
  • 2 cloves garlic chopped or 1 tsp granulated garlic
  • 2 zucchini sliced
  • 1 red bell pepper chopped
  • 1 red onion sliced
  • 1 pint cherry tomatoes
  • ½ cup kalamata olives
  • Crumbled feta cheese
  • 3 cups rice
  • 1 tbsp balsamic vinegar
  • salt and pepper to taste
  • 1 tsp dried oregano
  • 1 tsp red pepper flakes optional

Method
 

  1. Brown the ground chicken/beef in a large skillet.
  2. Add in the zucchini, red bell pepper, onion and garlic.
  3. Season with balsamic, salt and pepper, oregano, and red pepper flakes.
  4. Cook over medium low heat until veggies begin to soften.
  5. While this simmers, cook rice to package instructions. (Recommended method: bring 3 cups water to boil, stir in 3 cups of instant rice, cover with lid, turn off heat and let sit for 10-12 minutes until all liquid is absorbed.)
  6. When zucchini, bell pepper, and onions are almost done, add cherry tomatoes.
  7. Cook until all vegetables are soft.

Notes

Spoon the meat and vegetable mixture over a bed of rice, top with feta and olives and serve. Pairs well with warm naan bread and hummus.
