Ingredients
  

  • 3 cups rotisserie chicken, chopped or pulled
  • 2-3 ribs of celery, diced
  • 2-3 carrots, sliced
  • 1 onion, diced
  • 1/2 lb egg noodles
  • 6 cups chicken broth
  • 1/2 lemon, juiced
  • 1 tsp rosemary, chopped
  • salt and pepper to taste

Method
 

  1. In a pot over medium heat, put a drizzle of olive oil and cook the onion, celery, and carrots until the onion is translucent, seasoning with rosemary, salt and pepper.
  2. Next, pour in the chicken broth. Bring to a boil. Add in egg noodles and cook until tender, about 5-10 minutes. When the noodles are almost done, stir in the chicken to warm through as the noodles finish cooking at a simmer.
    When the noodles are soft and the veggies are softened, add the juice of half a lemon and stir. Serve with rustic bread or crackers.
