Ingredients
  

  • 2 lbs thin sliced steak or ground beef
  • 3 orange, red, or yellow bell peppers sliced
  • 1 onion sliced
  • ½ cup soy sauce
  • ¼ cup rice vinegar
  • 2 tbsp honey or brown sugar
  • 1 tsp garlic powder
  • 1 tsp ground ginger
  • 1 tbsp cornstarch
  • Sesame seeds for garnish optional
  • Red pepper flakes to top optional
  • 3 cups instant rice

Method
 

  1. Begin by steaming the rice. Preferred method: bring 3 cups water to boil in a pot, stir in 3 cups rice, place lid on and turn off heat. Allow to stand for 10-15 minutes, then fluff.
  2. While the rice steams, in a large skillet or wok, put a drizzle of oil Sear the steak or brown the ground beef (breaking it apart as it cooks). To this, add the sliced onion and peppers. Cook over medium heat until peppers and onion soften. To speed this process up, add in a ½ cup -1 cup water and simmer until soft/water has cooked out.
  3. While this cooks, make the sauce. In a measuring cup or small bowl, whisk together the soy sauce, vinegar, honey, garlic, ginger, and cornstarch. Pour over cooked beef and veggies. Stir well and allow to simmer until thickened to desired consistency.
  4. To serve, spoon the beef and pepper mixture over a bowl of rice, and top with red pepper flakes or sesame seeds.
