Ingredients
  

  • 2 lbs ground chicken, beef, or lamb
  • 1/4 cup breadcrumbs
  • 2 tbsp milk
  • 2 eggs, beaten
  • salt and pepper to taste
  • 2 tbsp garam masala
  • 3 cups instant rice
  • Toppings of choice: tzatziki, hummus, diced cucumber, kalamata olives, sliced mini peppers, feta, cherry tomatoes
  • Optional: naan or pita on the side

Method
 

  1. Begin by making the meatballs. Preheat oven to 375 degrees. Mix the ground meat, breadcrumbs, milk, eggs, salt and pepper, and garam masala to combine well. Scoop into small balls onto a parchment lined sheet pan. Bake for 20 minutes, or until cooked through.
  2. Use a small cookie scoop for consistent size.
  3. While the meatballs cook, make the rice, according to package instructions. Preferred method: bring 3 cups water to a boil, stir in 3 cups of instant rice, put a lid on, remove from heat and let stand for 15-20 minutes. Fluff with a fork.
  4. To assemble: Place rice in a bowl. Top with meatballs and all the toppings of your choice!
