- In a large pot or Dutch oven, add a drizzle of oil and sear the beef. To this, add the onion and celery, cooking until they begin to soften. Add in all of the vegetables you are using- potatoes, diced tomatoes, mixed vegetables, and okra- along with the beef broth, garlic powder, Worcestershire sauce, and salt & pepper to taste.Stir to combine and bring to a boil. Reduce to a simmer or low boil, put a lid on, and simmer until veggies are soft and beef is tender. Serve with cornbread or cornbread muffins.
