Ingredients
  

  • 1/2 cup Italian breadcrumbs
  • 1/2 cup milk, divided
  • 1 lb ground pork or ground chicken
  • 10 oz frozen spinach, cooked and water squeezed out
  • 1 egg
  • 1 cup Mozzarella, shredded and divided
  • 1/2 cup Parmesan, shredded and divided
  • salt and pepper to taste
  • 4 large Cubanelle peppers, split lengthwise with stem and seeds removed
  • 1 1/2 cups marinara
  • 1/2 cup chicken broth
  • Optional: fresh basil for topping
  • Rice, pasta, or bread for serving

Method
 

  1. In a bowl, mix breadcrumbs, 1/4 cup of milk, ground meat, spinach, egg, 1/2 cup Mozzarella, 1/4 cup Parmesan, salt, and pepper. Combine well. Divide this meat mixture between the pepper halves, stuffing each one.
  2. In a Dutch oven or skillet, warm the marinara sauce. Stir in the broth and nestle in the peppers. Cover with a lid and simmer for about 25 minutes, until peppers are soft and meat is cooked through. Uncover and stir remaining milk into sauce. Top the peppers with remaining cheese and cover again until cheese melts.
  3. To serve, plate over rice or noodles, or with a crusty French bread for sopping up sauce. Top with fresh basil. Suggested side dish- salad with Italian dressing.
