Tender rotisserie chicken is tossed with creamy tzatziki, crisp cucumbers, briny Kalamata olives, and tangy feta for a satisfying mix of textures and tastes. It’s perfect for busy weeknights or light lunches—simple to prepare yet full of bright, refreshing flavor. Serve it with warm naan or stuffed in pita pockets for a meal that feels both wholesome and indulgent.

Greek Chicken Salad
This one is a life hack. Using rotisserie chicken makes this the easiest and quickest dinner ever, but making it Greek takes it up a notch. If that's not your fam's jam, just go with a classic chicken salad!
Ingredients
Method
- Chop rotisserie chicken and in a large bowl, combine chicken, tzatziki, and your choice of other ingredients (all are recommended but omit anything you don’t care for!). Chill for a few minutes. Serve with naan bread and hummus, or put in a pita pocket and serve with a veggie tray.
To make your own quick tzatziki: Take 3/4 cup Greek yogurt, ½ cucumber grated with water squeezed out, juice of ½ lemon, salt and pepper to taste and if desired, fresh chopped dill- and just stir to mix well and chill in fridge.
Notes
If Greek flavors aren’t your jam, that’s ok. Just make a classic chicken salad using chopped rotisserie chicken, mayo, boiled chopped eggs, and pickle relish. Check our recipes for more chicken salad ideas!
