Greek Chicken Salad

This one is a life hack. Using rotisserie chicken makes this the easiest and quickest dinner ever, but making it Greek takes it up a notch. If that's not your fam's jam, just go with a classic chicken salad!

Ingredients
  

  • Ingredients:
  • 3 cups rotisserie chicken chopped
  • 10 oz tzatziki of your choice or homemade (see tips)
  • 1 cup pitted kalamata olives
  • 4-8 oz feta crumbles
  • 1 cucumber chopped
  • Optional other ingredients: ½ cup banana pepper rings, diced red bell pepper, pint of cherry tomatoes
  • Sides: naan, hummus, or pita pocket and vegetable tray

Method
 

  1. Chop rotisserie chicken and in a large bowl, combine chicken, tzatziki, and your choice of other ingredients (all are recommended but omit anything you don’t care for!). Chill for a few minutes. Serve with naan bread and hummus, or put in a pita pocket and serve with a veggie tray.
  2. To make your own quick tzatziki: Take 3/4 cup Greek yogurt, ½ cucumber grated with water squeezed out, juice of ½ lemon, salt and pepper to taste and if desired, fresh chopped dill- and just stir to mix well and chill in fridge.

Notes
