Total Time 30 minutes
Servings: 6
Course: Main Course
Cuisine: American

Ingredients

  • 1.5 lbs ground beef
  • 2 tbsp brown sugar
  • ½ tsp all spice
  • 2 tbsp balsamic vinegar
  • 1 tbsp Dijon or spicy brown mustard
  • salt and pepper to taste
  • 1 cup beef broth
  • sliced provolone cheese or cheese of choice
  • 6 russet or sweet potatoes, whichever you prefer

Method

  1. Cook potatoes by baking in oven until fork tender, or microwaving until fork tender. While they cook, brown ground beef and drain excess fat.
  2. Baking gives a crisper skin but can take a long time, especially with sweet potatoes, so if I need dinner quickly, I use the microwave method. I also do a mix of Russet and sweet potatoes, depending on what each family member prefers.
  3. With skillet over medium heat, add in brown sugar, all spice, balsamic vinegar, mustard, and salt and pepper to taste and stir well.
  4. Pour in beef broth and bring to a simmer. Allow to simmer until liquid reduces by half.
  5. To serve, split a potato and press it to open it up. Put a scoop of meat onto potato and top with cheese immediately.
Easy sides: bagged salad of choice, coleslaw, or any green vegetable.
