- Preheat your oven to 400 degrees. In a bowl, combine the Jiffy mix, egg, milk, green chiles, and cream corn. Pour this into a skillet and bake for 20-25 minutes.
- While the cornbread mix is baking, brown the ground beef in a seperate skillet. Season with cumin, chili powder, salt & pepper.
- When the cornbread is done baking and just set, remove from oven. Poke holes all over the top (you can use the handle of a cooking spoon, or just a butter knife). Pour the can of enchilada sauce over the cornbread. Top with the cooked ground beef and shredded cheese, spreading in an even layer. Return the skillet to the oven to melt the cheese. Top with sour cream and salsa, or toppings of your choice. Can be served with chips and salsa or a salad with chipotle ranch dressing.
