Smoked Salmon Frittata

This Smoked Salmon Frittata recipe is an easy, protein-packed weeknight dinner that's elegant enough for guests but simple enough for busy evenings.

Ingredients
  

  • 12 eggs
  • 1/2 cup milk, or cream, half and half, Greek yogurt (whatever you have on hand is fine!)
  • 2 tbsp chopped dill or dried dill
  • 8 oz smoked salmon, cut into bite size pieces
  • 4 oz cream cheese, cubed or goat cheese crumbled
  • salt and pepper to taste
  • Optional: diced tomato for topping

Method
 

  1. Preheat oven to 400 degrees.
    In a bowl, whisk together the eggs, milk (cream/half & half/yogurt), dill, salt and pepper to combine thoroughly. Fold in the salmon and cream cheese (or goat cheese).
  2. In an oven safe skillet (10-12 inch), melt a tbsp of butter (or use a drizzle of olive oil), and over medium low heat, pour in the egg mixture. Cook without stirring or moving the eggs for about 4-5 minutes, just until the edges are set.
  3. Transfer to the oven. Cook for about 12-15 or until the fritatta is cooked through, checking occasionally. A knife inserted in the center should come out with no liquid egg on it. Allow it to sit for about 5 minutes before slicing.
    Cut into triangle slices and serve with fruit and/or roasted potatoes.
