Ingredients
  

  • 3 cups sharp cheddar cheese, grated *see notes*
  • 4 oz pimento peppers, drained and chopped
  • 3/4 cup mayonnaise
  • 1/2 tsp red pepper flakes
  • 1/4 tsp Worcestershire sauce
  • salt and pepper to taste
  • 2-3 cups rotisserie chicken, chopped
  • bread or crackers for serving

Equipment

  • 1 food processor optional

Method
 

  1. In a food processor, combine the cheese, pimento peppers, mayo, red pepper flakes, Worcestershire, salt, and pepper. Pulse until well combined, then blend to desired consistency, stopping to scrape down the sides occasionally to make sure everything is mixing well.
  2. Empty this mixture into a large bowl. Add chopped rotisserie chicken and stir well to combine them. Serve on bread or with crackers.
  3. Next level: use this as a filling to make a grilled chicken pimento cheese sandwich!
  4. Plate it up with sides- a veggie tray with Ranch, chips, a big salad, or some broccoli.

Notes

*For an extra short cut, use a tub of store bought pimento cheese instead of making it.*
