Ingredients
  

  • 2 lbs cubed stew beef
  • salt and pepper to taste
  • 1-1.5 lbs quartered red potatoes or baby potatoes
  • 4 carrots, sliced diagonally
  • 1 onion, diced
  • 3 cloves garlic, grated
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire
  • 1 tsp rosemary
  • 1 tsp paprika
  • 1/4 cup flour

Method
 

  1. Preheat the oven to 275 degrees. In a Dutch oven or large pot with a lid, add the broth and tomato paste. Stir or whisk well to combine. Whisk in flour, then stir Worcestershire, rosemary, paprika, and garlic. Season with salt and pepper.
  2. Layer in the onion, carrots, potatoes, and beef, and season well with salt and pepper to taste. Cover with lid and bake for 2-3 hours, until beef and veggies are tender. Serve with warm bread and a salad

Notes

*Can be adapted to slow cooker, but cook time may vary.  I suggest starting with 3-4 hours on high or 7-8 on low, checking along the way.
