Mediterranean Flatbread

These flatbreads are so easy, it's kind of cheating. Huge win for when you're short on time or tired, because you still got a delicious dinner on the table. Bonus- everyone can pick their toppings, so it's perfect for pickier eaters.

Ingredients
  

  • Ingredients:
  • 2-3 cups shredded rotisserie chicken warm
  • 6-8 pieces of naan bread
  • Toppings of choice: hummus, tzatziki(*see note in instructions*), kalamata olives, cherry tomatoes, sliced mini sweet peppers, banana pepper rings, diced cucumber, crumbled feta

Method
 

  1. Warm naan bread (in microwave or oven) and rotisserie chicken. Assemble flatbreads according to preference- Recommend starting by spreading hummus on bread, layering on meat and vegetables, and topping with feta and tzatziki. Serve with salad on the side.

Notes

To make your own tzatziki, grate ½ cucumber and squeeze out water. Add this to 1 cup Greek yogurt, along with juice ½ lemon, salt and pepper to taste, and optionally, 1-2 tbsp fresh dill. Combine well and chill.
