Meatloaf Dinner

The secret here is in the sauce - literally. A homemade meatloaf sauce takes minutes to shake up in a jar but tastes next level. Use our suggested sides or pick your own!

Ingredients
  

  • 2 lbs ground beef
  • 1.5 lbs baby potatoes halved or quartered
  • 24 oz green beans fresh or frozen
  • ½ cup breadcrumbs
  • 2 eggs beaten
  • salt and pepper to taste
  • 2 tsp Worcestershire
  • 2 tbsp milk
  • ¾ cup ketchup
  • 2-3 tbsp apple cider vinegar
  • 1 tbsp mustard yellow or spicy brown
  • 2 tsp Worcestershire
  • ½ tsp cumin
  • 1 tsp chili powder
  • ½ tsp paprika
  • 1 tsp granulated garlic

Method
 

  1. Line 2 sheet pans (one large, one medium size) with parchment paper.
  2. Preheat oven to 400 degrees.
  3. In a mixing bowl, combine the ground beef, breadcrumbs, eggs, 2 tsp Worcestershire, milk and salt & pepper.
  4. Form into a loaf on the medium size sheet pan that is wide and about 1 ½ inches thick.
  5. Using a sheet pan here will help it cook faster than using a loaf pan.
  6. On the other pan, combine the baby potatoes and green beans with a liberal drizzle of olive or avocado oil, and salt & pepper to taste.
  7. Place both pans in the oven for 20 minutes.
  8. While that cooks, make the meatloaf sauce. Combine the ketchup, vinegar, mustard, Worcestershire, cumin, chili powder, paprika, and garlic and ¼ - ½ cup hot water by whisking or shaking in a small mason jar.
  9. Start with ¼ cup water and if mixture is too thick, you can add a little more.
  10. After 20 minutes of cooking, remove meatloaf and lightly glaze it with the sauce (reserve the rest of the sauce for topping) and return to oven for 5 minutes or until cooked to your preferred doneness, and potatoes are fork tender.

Notes

Slice meatloaf and top with reserved sauce and serve with veggies. You could sub mashed potatoes and any green vegetable of your choice. You could also just use your favorite BBQ sauce instead of making this meatloaf sauce if you’d prefer.
