Method
- Preheat oven to 400 degrees. Season salmon with chili powder, cumin, paprika, and salt & pepper to taste. Arrange salmon on baking sheet and drizzle with olive oil. Bake for 12-15 minutes until just flaky.
- While the salmon cooks, make the salsa by combining the mangos, avocados, bell pepper, and black beans in a bowl. Squeeze in lime juice and a drizzle of olive oil, and season with salt and pepper to taste. If using cilantro, stir in now. Combine everything well.
- To serve, spoon the salsa over the salmon. This works well on a bed of rice, but use the side of your choosing, or turn it into a taco for another spin on the recipe.
Salmon also cooks beautifully on a flat top griddle!
Notes
To make flavored rice: Cilantro Lime- Cook white rice to package instructions and stir in juice of 1 lime and chopped cilantro after cooking. Alternatively, try coconut lime rice- white rice cooked to package instructions in half water, half coconut milk, and then stir in lime juice added after cooking.
