Mango Salsa Salmon

This Mango Salsa Salmon is colorful and pretty, and tastes just as bright and flavorful as it looks! If your family (or part of your family) doesn't love salmon, you can sub in a flaky white fish, or even shrimp. Healthy, delicious, and easy to customize- a winner for sure.

Ingredients
  

  • Ingredients:
  • 2 mangos peeled and cut into cubes
  • 3-4 avocados cut into cubes
  • 1-2 red bell peppers chopped
  • 15 oz can black beans rinsed and drained
  • Juice of 1-2 limes
  • Optional: cilantro
  • Salt and pepper to taste
  • 8 salmon filets
  • 2 tsp chili powder
  • 2 tsp paprika
  • 1 tsp cumin
  • Optional side: cilantro lime rice or coconut lime rice *see notes*

Method
 

  1. Preheat oven to 400 degrees. Season salmon with chili powder, cumin, paprika, and salt & pepper to taste. Arrange salmon on baking sheet and drizzle with olive oil. Bake for 12-15 minutes until just flaky.
  2. Salmon also cooks beautifully on a flat top griddle!
  3. While the salmon cooks, make the salsa by combining the mangos, avocados, bell pepper, and black beans in a bowl. Squeeze in lime juice and a drizzle of olive oil, and season with salt and pepper to taste. If using cilantro, stir in now. Combine everything well.
  4. To serve, spoon the salsa over the salmon. This works well on a bed of rice, but use the side of your choosing, or turn it into a taco for another spin on the recipe.

Notes

To make flavored rice:  Cilantro Lime- Cook white rice to package instructions and stir in juice of 1 lime and chopped cilantro after cooking.  Alternatively,  try coconut lime rice- white rice cooked to package instructions in half water, half coconut milk, and then stir in lime juice added after cooking.
