- Start by steaming your rice, the base of the bowl. My preferred method is to bring 3 cups of water to a boil in a pot, pour in 3 cups rice, stir, cover with a lid, and turn off heat. Allow to stand for 10-15 minutes until fluffy.
- While the rice steams, cook the chicken and some of the vegetables. If using chicken tenders, season with your favorite seasoning (like lemon & pepper or a Greek seasoning) and grill for 3-4 minutes per side, or cooked through. If using rotisserie chicken, just chop and warm it.
- You can cook the onion and bell peppers in a skillet with a drizzle of oil and about ½ cup water until they are softened, or you can use them raw, whichever you prefer for this bowl. If cooking, don’t forget to add salt and pepper to taste, and you can add the zucchini in with the peppers and onion and cook until softened. Alternatively, you can grill zucchini planks with the chicken tenders.
- If using raw peppers and onion, in a skillet over medium heat, add a drizzle of oil and the zucchini. Season to taste and cook until softened.
- Once the chicken, zucchini, peppers, onions, and rice are ready, you can assemble the bowl. Start with the rice as a base, add in the chicken, peppers, onion, fresh tomatoes, zucchini, cheese, and top with guacamole (here is our guacamole recipe).
Feel free to swap out, add to, or omit the veggies based on what you like and can find! You can also swap the protein- shrimp, steak, or chicken sausage would be delicious in this.
