Easy Migas

This Easy Migas recipe works beautifully for a busy weeknight because it uses simple, inexpensive ingredients and comes together in just one pan.

Ingredients
  

  • 2 cups tortilla chips of choice, broken into bite size pieces
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 jalapeno, diced
  • 12 eggs, beaten together and seasoned to taste
  • 2 cups shredded Monterey or Pepper Jack cheese
  • Toppings of choice: diced tomatoes, salsa, cilantro, sliced avocado, sour cream, hot sauce

Method
 

  1. In a skillet, put a drizzle of oil and cook the onion and peppers until soft, seasoning with salt and pepper.
  2. Once soft, over medium low heat, scramble the eggs gently. Do not overcook. Just before the eggs are done, turn the heat to low and stir in the tortilla chips and cheese. Stir gently.
  3. If you like a little heat, try adding hot sauce (to taste) to the beaten eggs before scrambling.
  4. Plate the eggs and top with desired toppings. Serve with bacon or sausage and black beans on the side. You can also stuff this into a tortilla for a kind of miga taco.
