- In a skillet, put a drizzle of oil and cook the onion and peppers until soft, seasoning with salt and pepper.
- Once soft, over medium low heat, scramble the eggs gently. Do not overcook. Just before the eggs are done, turn the heat to low and stir in the tortilla chips and cheese. Stir gently.
- Plate the eggs and top with desired toppings. Serve with bacon or sausage and black beans on the side. You can also stuff this into a tortilla for a kind of miga taco.
If you like a little heat, try adding hot sauce (to taste) to the beaten eggs before scrambling.
