Cheesy Sausage and Potato Soup

Ingredients
  

  • 1/2 lb Conecuh sausage or your favorite sausage
  • 1 onion, diced
  • 2 tsp granulated garlic or 2 garlic cloves grated
  • 6 cups chicken broth
  • 3 large Russet potatoes, cut into bite size pieces (and peeled if you like)
  • 2 ribs celery, diced
  • 8 tbsp butter
  • 1/2 cup flour
  • 3 cups milk
  • 2-3 cups shredded cheddar cheese
  • salt and pepper to taste

Method
 

  1. In a large pot or Dutch oven, cook the sausage, onion, and garlic. Cook until sausage is browning and onion is becoming translucent.
    To this, add the chicken broth, potatoes, salt and pepper to taste, and celery. Stir this around and then bring to a boil. Keep at a low boil until the potatoes are fork tender.
  2. While this boils, in a skillet over medium heat, melt the butter. Stir in the flour to form a roux, and stir this for a few seconds. Slowly whisk in the milk, doing your best to get rid of lumps. Season with salt and pepper to taste. Simmer this until it begins to thicken. You want it to coat a spoon. Remove from heat and whisk or stir in cheese until it melts. Sit aside.
  3. Once the potatoes are fork tender, use a potato masher to mash about half of them. Then pour in the cheese mixture and stir well to combine. Once combined, it's ready to serve.
    Serve as is, or top with more cheese, sour cream, and chives.
