Burrito Bowls

Picky eaters win tonight because this one is easy to customize! Pick your family favorites and let everyone build their own bowls.

Ingredients
  

  • 2 lbs protein of choice ground beef, chicken, or shrimp all work great
  • 1 packet Taco seasoning of choice
  • 3 cups instant rice
  • 1.5 cups Salsa plus more for topping
  • 2 onions sliced (optional)
  • 2 bell peppers sliced (optional)
  • 15 oz black beans or pinto beans drained
  • 1 tsp cumin
  • 1 tbsp chili powder
  • 1 bag frozen corn steamed
  • Toppings of choice: sour cream, salsa, cheese, lime wedges, cilantro, guacamole
Optional Guacamole
  • 3 avocados
  • 1 can diced tomatoes with chiles drained
  • 1 lime
  • cilantro
  • salt and pepper to taste

Method
 

  1. If using onion and bell pepper, start by slicing them and adding to skillet with a little oil.
  2. Put in about ½ cup of water and simmer until soft.
  3. If water simmers out before the vegetables are soft, add a little more in.
  4. Begin on rice per rice instructions (recommended method: bring 3 cups of water to boil, stir in the 3 cups of rice, cover with lid and turn heat off. Allow to sit for 10/12 minutes until rice is soft and liquid is fully absorbed.)
  5. While rice is cooking, go ahead and cook your protein with taco seasoning and about ½ cup of water. Simmer to thicken.
  6. In a small pot, heat your drained beans and stir in cumin and chili powder.
  7. Once rice is cooked, stir in 1-1 ½ cups of salsa and mix well. Allow to sit and further absorb salsa while you work on other things. This is the base for the bowl.
  8. When everything is cooked, assemble your bowls: rice, protein, beans, peppers and onions, and corn.
Guacamole
  1. Score and scoop out 3 ripe avocados.
  2. Drain the can of tomatoes with chiles well and add to bowl with avocados.
  3. Add juice of one lime, along with salt, pepper, and cilantro to taste.
  4. Mix well. If you prefer a smoother guac to a chunky one, use a potato masher to smooth to desired consistency.

Notes

Add toppings of your choice and serve with your favorite tortilla chips.
