Bacon Potato Hash with Eggs

This bacon potato hash is a weeknight lifesaver because it uses just a handful of ingredients and cooks quickly. And if you use one big griddle for the hash and the eggs, clean up is a breeze!

Ingredients
  

  • 1 lb bacon, chopped
  • 3 large Russet potatoes, diced slightly smaller than bite size
  • salt and pepper to taste
  • 12 eggs

Method
 

  1. On a griddle or in a large skillet, cook bacon until almost done. Add in the potatoes. Season with salt and pepper to taste. Add 1/4-1/2 cup water and cover with dome or lid to steam. Stir occasionally, cooking until the potatoes are fork tender. This usually takes about 15-20 minutes.
  2. In the last 5-10 minutes of the potatoes cooking, cook the eggs to your preference (scrambled, fried, over easy), seasoning to taste. Serve with the bacon potato hash, or on top if over easy.
  3. For extra flavor, you can add some chopped peppers and onions with the potatoes!
