Ingredients
  

  • 1 lb ground beef
  • 1 package dry ranch seasoning
  • salt and pepper to taste
  • 2 15 oz cans kidney beans, drained
  • 1 15 oz can corn, drained OR 12 oz bag frozen corn
  • 1 10 oz can diced tomatoes with chiles
  • 1 15 oz can diced tomatoes
  • 1 15 oz can chicken broth
  • shredded cheese, sour cream, salsa or guac for topping
  • tortilla scoops for serving

Method
 

  1. To make: In a large pot or Dutch oven, brown the ground beef, breaking it apart as it cooks. Season with salt and pepper to taste. Once browned, add in ranch seasoning, beans, corn, tomatoes, and broth. Stir well to combine. Simmer for 15 minutes with lid on.
  2. Top with shredded cheese, sour cream, salsa or guacamole (see our recipe!). Serve with tortilla scoops.
