Ingredients

  • 6 thick, flaky white fish filets of your choice
  • 1 lemon, zested and juiced
  • 4 tbsp butter
  • 1/2 cup broth
  • salt and pepper to taste
  • 1 tsp garlic powder
  • rice and salad or vegetables for serving

Method

  1. Pat fish filets dry with a paper towel. Season both sides with salt, pepper, and garlic powder. In a large skillet, put a drizzle of oil. Cook the fish in this over medium to medium high heat for 2-3 minutes per side, until it is flaky and just opaque. Do not overcook. Remove from skillet.
  2. In the same skillet, melt in butter, then pour in lemon juice, zest, and broth. Stir to combine over medium heat. Season to taste with salt and pepper.
Return fish to skillet off heat. To serve, place fish filet over a bed of rice and spoon the lemon butter sauce over top. Pairs well with salad or steamed vegetables.
