- Start by cooking your rice or potatoes, whichever you prefer as the base of your bowl. If using potatoes, just season with salt and pepper, coat in olive oil and roast in 400 degree oven for about 20 minutes, until fork tender.
- While rice or potatoes are cooking, preheat grill or grill pan to 425 degrees. Season chicken with salt, pepper, paprika, chili powder, and cumin. Grill 8 minutes per side, or until chicken is cooked through.
- While the chicken cooks, make coleslaw. In a bowl, mix mayo, mustard, vinegar, salt and pepper and whisk until combined. Stir in bag of coleslaw and chill.
- When chicken is cooked, cut into bite size pieces. Assemble bowls- rice or potatoes, chicken, slaw, and toppings of choice- pickles, pickled onion, ect., then drizzle with hot honey.
