Ingredients
  

  • 12 slices sourdough or bread of choice
  • 6 tbsp butter, softened
  • 1 lb bacon, cooked and halved to fit bread
  • 1 round of brie cheese, sliced
  • 1/2 cup jam of choice- orange marmalade, fig preserves, and strawberry jam are great options

Equipment

  • 1 griddle or griddle pan

Method
 

  1. Make sure bacon is cooked and halved, and have everything set up and ready in an assembly line style. Butter each slice of bread with softened butter.
  2. Preheat a griddle or griddle pan over medium low heat. Place a slice of bread, buttered side down, onto griddle. Quickly stack on brie, a dollop of jam, a few slices of bacon, and one more slice of brie, topping with the another slice of bread, buttered side out. Grill until golden, press with a spatula, and flip. Grill this side until golden, and remove from griddle. You can do several at a time, depending on the size of your griddle.
  3. Once all the sandwiches are toasted, slice on a diaganol and serve with chips or a salad.
  4. If you have some non-brie lovers, just make them a grilled cheese with bacon, using whatever kind of cheese they like. Custom without extra fuss!
