This easy Soft Tacos recipe is the kind of quick, customizable meal that works for busy weeknights or casual entertaining. We love all the tacos, but sometimes a good classic soft taco just can't be beat. Warm seasoned beef, melty cheese, cold sour cream. YES PLEASE.

Ingredients
  

  • Ingredients:
  • 2 lbs ground beef, or ground chicken, or 3-4 cups shredded rotisserie chicken
  • 2 packets Taco seasoning, or 4 tsp chili powder, 3 tsp cumin, 1 tsp paprika, salt & pepper to taste
  • 15 oz can black beans, drained
  • 8 oz cheddar cheese, shredded
  • Soft taco size tortillas
  • Toppings: salsa, sour cream, guacamole (*see notes for easy to make guac instructions*), shredded lettuce, diced tomato
  • Optional sides: Mexican rice, refried beans, chips and salsa

Method
 

  1. Brown the ground beef and drain excess fat. Add in drained black beans and taco seasoning. (If using taco seasoning packet, follow instructions for adding water).
  2. To make these very fast and simple, just warm some shredded rotisserie chicken with the beans, and season the same as the beef.
  3. Warm tortillas and then assemble- beef & beans, cheese, and toppings of choice. Serve with refried beans, Mexican rice, and/or chips and salsa!

Notes

*For a fast & easy guacamole, score and scoop 3-4 avocados into a bowl, add in one well drained 10 oz can of diced tomatoes with chiles, the juice of one lime, salt and pepper to taste, and if desired, some cilantro. Mix well to combine. For a smoother guac, use a potato masher to mash avocados.*
