Stuffed Peppers
This recipe puts protein and veggies all in one dish. There are lots of versions of stuffed peppers, and this one is a tried and true classic that aims to please.

Method
- Preheat oven to 375 degrees. Place the cut and deseeded peppers onto a sheet pan or baking dish, cut side down, and place in oven. Allow them to parcook for around 10-15 minutes while you brown the meat ( and cook rice).
- In a large skillet, brown the ground beef (or chicken) and season with garlic, 1 Tbsp dried Italian seasoning, salt, and pepper. Once cooked through, remove from heat and stir in tomatoes, rice, the remaining Italian seasoning, spinach (if using), and salt & pepper to taste.
- Remove peppers from oven turn them over. Stuff with filling, using two spoons to scoop and press filling in. Top with the Mozzarella cheese and return to oven for 10-15 minutes until cheese is melted and peppers are tender.
