I come back to this one a lot when I'm short on time and energy.
Total Time 30 minutes
Servings: 6 -8
Course: Breakfast, Main Course
Cuisine: American

Ingredients

  • 2-3 lb bag of your favorite southern style chicken nuggets I use Member’s Mark Southern Style Chicken Bites, but any southern style nuggets will work!
  • 3 cups flour
  • 4 tbsp corn starch
  • 1 tsp baking soda
  • 2 tsp salt
  • 2 eggs
  • 1/2 cup sugar
  • 3 cups milk or buttermilk
  • 2 tsp vanilla extract
  • cooking spray
  • Optional toppings: pecans, hot honey, honey, syrup

Equipment

  • 1 waffle maker

Method

  1. Place the nuggets in an air fryer according to package directions.
  2. While they cook, make the waffles. Start by pre-heating your waffle iron/maker. While it heats, in a bowl, whisk together your flour, cornstarch, baking soda, salt, eggs, sugar, milk, and vanilla until mostly smooth. Some lumps may remain.
  3. If you don’t have a waffle maker, you could make pancakes instead!
  4. When the waffle iron is hot, spray with cooking spray and spread waffle batter in. Cook until golden brown. Work in batches until all waffles are cooked. You can keep them warm on a sheet pan with parchment paper in the oven on low heat.
If you like pecans, you can mix in about ½ cup with the waffle batter, or just sprinkle some in individual waffles as you spread them in the waffle maker.
  5. Feel free to use your favorite box mix of waffle batter if you don’t want to make them from scratch!
  6. To serve, plate 2 waffles, top with crispy chicken nuggets, and drizzle with hot honey (or honey or syrup, whatever you like!). Serve with fruit.
  7. If you'd rather make your own chicken nuggets, YAY! Cheering you on, but this method gives me a win on nights that I'm low on time or energy, and just need to pull something yummy together!
