Method
- Preheat oven to 425 degrees. Line a baking sheet with parchment paper.
- In a food processor (with a dough blade if you have it), pulse the dry ingredients together to combine. Cut in the butter until it forms coarse crumbs. Try not to over process- just get it crumbly. Slowly pulse in 1 cup milk. Do not overwork the dough, pulse until just combined.
- Dump the dough onto the counter and knead together. You may need to sprinkle some flour to keep it from sticking. It's a sticky dough, but just keep flouring and working with it. Roll the dough into a rectangle or circle approximately 3/4 inch thick.
- Using a biscuit cutter, cookie cutter, or just a drinking glass, cut into 12 biscuits, re-rolling and reshaping the dough as needed. Arrange on the baking sheet (or in an iron skillet) with edges touching.
- Brush the tops of the biscuits with the 2 tbsp of milk. Bake 12-18 minutes, until just golden brown. Remove from the oven. You can brush the tops with a tbsp or so of honey at this point, or leave as is.
These freeze well, so make a double batch and freeze half for another time!
