- Start by cooking the bacon or sausage until done. If using bacon, it should be chopped, and if using ground breakfast sausage, cook & crumble. Remove from skillet.
- In that skillet, scramble the eggs, seasoning with salt, pepper, cumin, chili powder, and paprika. Fold in the black beans. Do not overcook the eggs, they should be soft and just set. Remove from heat. Fold in the bacon or sausage.
- Spoon this mixture evenly between the 6 tortillas, adding shredded cheese to each one. Roll up tightly and top with whatever you like- salsa, avocado, hot sauce. Serve alone or with hashbrowns and fruit.
These freeze well wrapped individually.
